Ginger Pear Honey Cake in a Cast Iron Skillet

Ginger, pear, honey cinnamon, and other spices make this cake extra comforting. Serve warm with ice cream or whipped cream!

Ginger Pear Honey Cake

We’re moving this week! And I very much should be packing/cleaning/doing my job instead of writing/cooking, but if I’ve learned anything from college, it’s how to do the most amount of work in the least amount of time. So far so good.

Procrastination or not, these past few weeks have been an absolute blur and I don’t have much energy to be creative or write. Which is fine—moving is a lot of effort! And I still have friends and family to see!

This ginger pear honey cake was a quick, off-the-cuff recipe I made for a friend dinner last week. In my trusty cast iron skillet, no less! It came together unnervingly well, a rarity for a recipe that I threw together in 10 minutes. Guess I’m just as good as using my max/least work/time tactic for recipe writing too.

Needless to say, this is a spicy, cozy cake that ushers in fall quite well. Serve warm with whipped cream or ice cream, or both—y’all crazy.

Ginger Pear Honey Cake

  • Serves: 10
  • Yield: 1 cake

Ingredients

  • 1 stick unsalted butter, room temperature
  • 100 grams (1/2 cup) granulated sugar
  • 2 eggs, room temperature
  • 250 milliliters (1 cup) honey
  • 150 grams (1.25 cups) spelt (can use AP flour instead)
  • 150 grams (1.25 cups) AP flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 pear, cored and thinly sliced

Instructions

  1. Preheat oven to 325 degrees. Spray a cast iron skillet and set aside.
  2. In the bowl of a stand mixer, cream together the butter and sugar on medium speed until light and fluffy 2-3 minutes.
  3. Lower speed to medium-low and add eggs, mixing well and scraping down the bowl after each addition.
  4. Pour in honey.
  5. Reduce speed tot low and add in all the dry ingredients. Mix until batter has come together and there are no dry spots. Scrape down the bowl as needed.
  6. Pour batter into prepared cast iron skillet. Arrange pear slices on top in a decorative pattern and place skillet in the oven. Bake for 40-45 minutes until the center is set and a toothpick comes out clean.
  7. Let sit for 10 minutes before serving warm.
