- Total Time: 50m
- Yield: 2 small mason jars
Ingredients
- 2 quinces
- 2 plums
- 100 grams (1/3 cup) high quality honey
- 100 grams (1/2 cup) granulated sugar
- 100 grams (1/2 cup) medium brown sugar
- 2 star anise
- 2 cinnamon sticks
- 2 bay leaves
Instructions
- Dice the quinces and plums into small pieces, a half-inch or smaller in diameter. Weigh them to get around 600 grams and save the rest for later. If you don\'t have a scale, you should be around 600g anyways, but the scale just makes sure it\'s accurate. Set aside.
- In a small pot, combine honey, sugars, and spices and heat over medium until the mixture comes to a simmer.
- Add the chopped fruit and lower heat to medium-low. Simmer for 30 minutes, stirring occasionally with a wooden spoon.
- Remove from heat. Scoop about a third of the mixture into a food processor or small blender and blend until nearly smooth. Scrape the puree back into the pot and mix together. Pour jam into jars and let it sit at room temperature uncovered until it is completely cool. Then close the jars and move to fridge.
