Ingredients
- 2 lbs very ripe apricots
- 2 star anise
- 1 big cinnamon stick
- 2 cups sugar
- 1 lemon
- 3 Tbsp Grand Marnier
Instructions
- De-pit and slice the apricots into quarters or sixths, if the fruit is large. Discard the pits and place the slices in a large pot along with the star anise, cinnamon stick, and 1/4 cup of water.
- Heat on medium-high until mixture is boiling, then reduce to medium and continue to simmer for 10 minutes.
- In the meanwhile, place a small plate in the freezer.
- Add the sugar and continue to simmer for another 15-20 minutes, stirring frequently. While jam is cooking, zest your lemon and cut in the lemon in half.
- Remove plate from the freezer and add a tiny drop of jam to it. Return to the freezer for a couple minutes. When you nudge the jam with your finger and it becomes wrinkly, the jam is done. Keep cooking and stirring until you reach this stage.
- Once it's done, remove from heat, and add in the lemon zest and lemon juice from both halves. Then add the Grand Marnier. Taste after the first tablespoon to see if you want to add any more.
- Transfer the jam into jars, and let cool completely to room temperature before sealing and putting in the fridge.
