I made this boozy Kahlua coffee cake because for some reason, we have a lot of Kahlua at our apartment. Like four bottles. At least. I’m not sure how they got there (yes I do, I totally bought them forever ago and forgot about them), but now I’m on a mission to use them up in every way possible.
Before this Kahlua discovery, I was in Ireland for a week for work, and also for a lot of Guinness. Like a LOT of Guinness. I’ve discovered that Guinness tastes much better in Ireland, and also that I have no idea what my limit is when drinking it (oops – it tastes so good!).
Our Dublin office also has a “treat trolley” that patrols the hallways everyday at 3pm to give us desserts. I don’t know what genius came up with this brilliant idea, but every since I’ve been back in the States, I’ve been dreaming of this treat trolley and what I’d want to see on it. So I came up with this Kahlua coffee cake recipe as the first tribute to my future personal treat trolley.
Packed with boozy Kahlua (you could use Guinness or Baileys), brown sugar, and pine nuts (they offer a milder taste than other nuts so the Kahlua really shines through), this coffee cake is the biznass. It’s so good that I’ve already made it twice in a week cuz my housemates keep eating it. It’s so good that I’ve gone through a can of condensed milk in a week because we keep pouring over cake slices when they’re warm. Basically, it’s so good.
Treat trolley or not, I know I’ll be making this coffee cake over and over again, or at least until I finish all the bottles of Kahlua in our cabinet.

i love kahlua flavored baked foods (or drink it with iced coffee)…also, you can try making boozy truffles & brownies…i could see it being heavenly on a cupcake as frosting. omgeeee i wish i was your housemate now, mainly for that treat trolley 😛
