While 2017 ended with some solo exploring (more on my Spain trip later), the first few weeks of 2018 have been BUSY. So far I’ve clocked in 3 swim sessions per week, a Seattle trip, and a complete overhaul of my apartment.

For most of 2017, I was barely at home, spending my evenings with the (ex) s/o or traveling. My apartment was meant only for sleeping and cooking, which admittedly, I did less of as well since I get fed at work. The result was that I’ve been lethargic and uninspired. I don’t want to cook, I don’t want to write, and I certainly don’t want to clean or do any work.
Little by little, I’m figuring out how to change that. It’s started with selling old furniture I don’t use, and now having the apartment repainted. That means that the next couple of weeks are going to be in disarray until the paint job is done, which has been forreal stressing me out; can I just skip to the end where my apartment is shiny and new?
As the painting gets done, my kitchen will be in and out of full functionality, which has also prevented me from cooking. Butttttt the stoves and oven still work, so I kinda have been moping around for no reason and I’m calling myself out on that. So FINALLY I stopped moping and made this for y’all: a coconut cream Dutch baby pancake.
I’ve had this recipe written in a note on my phone for several weeks now. I like it cuz it’s super easy to make and looks v v impressive when serving it to a crowd. The Dutch baby signature look is the puff that comes from baking at a high temperature.
The first time I made this, I didn’t achieve said puff and it looked like a flat, normal pancake. Still tasty, but not super wow. Then I figured out the trick: more eggs, and making the pan SUPES hot before pouring in the batter. It immediately turns the water from the butter into steam, and flash cooks the eggs so everything rises on up.
My goal is to actually have friends over to my place once it’s all finished so I can make this for them. For now, I gotta be a liitttttle more patient. In the meanwhile, do you guys have places you look at for room design and furniture arrangement? Send to me!
